Job Summary:
We are seeking a highly motivated and creative R&D Executive specialising in tempeh-based product development. The role involves researching, formulating, testing, and refining tempeh and other soy-based innovations for healthy snack applications. The candidate will also contribute to improving shelf-life, taste, texture, and nutritional value, ensuring products meet food safety standards and market expectations.
Based in: Kota Kinabalu, Sabah
Job Responsibilities:
1. Product Development:
- Develop new tempeh-based products, including chips, ready-to-eat meals, and snacks.
- Innovate on flavours, fermentation methods, and non-GMO formulations.
- Explore plant-based alternatives and clean label ingredients.
2. Process & Quality Improvement:
- Optimise tempeh fermentation and post-processing techniques (e.g., drying, seasoning, retort).
- Improve product shelf life while maintaining texture and taste.
- Reduce production waste and support upcycling of by-products.
3. Testing & Documentation:
- Conduct lab-scale and pilot-scale trials with detailed recording.
- Evaluate physical, chemical, and sensory attributes of prototypes.
- Prepare technical specifications, SOPs, and quality benchmarks.
4. Regulatory & Safety Compliance:
- Ensure all products comply with Halal, MeSTI, HACCP, and relevant food safety standards.
- Support documentation for food labeling, nutritional facts, and ingredient declarations.
5. Market Trend & Consumer Insight:
- Monitor industry trends in plant-based foods, tempeh applications, and healthy snacking.
- Collaborate with marketing on customer feedback and product positioning.
6. Cross-Functional Collaboration:
- Work closely with production, quality assurance, and marketing teams.
- Liaise with ingredient suppliers, universities, and external food labs
